I can’t believe it’s November already. You know what that means, right?
Halloween is over, Thanksgiving is around the corner, Christmas is upon us, and my daughter has been eating the same peanut butter crackers for snack at school for 2 1/2 straight months.
My daughter is a boring eater. She eats the same thing every day for lunch: salami, a string cheese, fruit, and crackers. She has the same thing for snack: peanut butter crackers.
Sometimes she allows me to get all crazy and stuff and pack her a peanut butter sandwich, with cheese crackers for snack.
Lately she’s been saying she’s bored with her recess snack and that she wants something different.
Really? I have no idea why.
So, I’ve been wracking my brain to come up with some new snack ideas for her. Ones that will carry us at least until January.
Enter these bars.
They are kind of like a peanut butter sandwich. But they come disguised as a granola bar. Perfect for a snack - or even for lunch.
So, really, they’re like Superman. A plain, boring Clark Kent on the inside and a super hero on the outside.
And, better yet, if you make these for your kids, they will probably think you’re a super hero. They’ll look at you with worship in their eyes and search for your cape hidden beneath your mom jeans.
Not only do these bars have super powers, but they are so simple to make, AND they’re full of ingredients with staying power, to get your kids through that loooooong math lesson.
They start with some of the best bread ever, King’s Hawaiian Original Hawaiian Sweet Round Bread. It’s diced and mixed with all your favorite granola bar ingredients: peanut butter, oats, coconut, chocolate chips. Then pressed into a pan and baked. Slice into bars and you have a delicious snack that will get your kid from reading to lunch, or you can pack this as their sandwich. What kid wouldn’t love to open their lunch box and find a bar cookie as their meal?
And, as with any granola bar that you make at home, you can change out your ingredients to fit your kid. They don’t like coconut? No problem, leave it out. Want to leave out the chocolate? Sure, why not. Want to use cashews instead? Why not? Add some flax or wheat germ for even and even healthier treat. Or even a swirl of jelly. When you think about all the kind of boggles the mind.
Superhero bars with superhero powers.
These will definitely make my daughter happy at snack recess. The other kids will probably think she has superhero powers because she got her mom to make her a snack bar with chocolate in it.
Perfect to propel her through the day, sans cape.
