'Āina Kopi was launched upon a passion for sharing real food and a deep appreciation for the year-round abundance and variety of fresh ingredients grown on Maui.

Chef and farmer, Ignacio, grew up in rural Argentina where cooking from scratch was the norm and sharing culinary experiences was a big part of family life. His relocation to Maui expanded the way he cooks and eats by introducing him to the island’s year-round abundance of exotic fruits, vegetables and spices.

Surprised by the limited and often highly processed definition of “local food” that visitors are typically familiar with, Ignacio became committed to giving prominence to Hawai'i's lesser known foods and flavors outside of the islands.

After a 20-year global culinary career, Ignacio employed his enthusiasm for sharing favorite family recipes and preserving fresh and healthy ingredients naturally to create a brand that exemplifies taste as an experience, supports the local agricultural community and perpetuates ancient processing techniques that harness nature without harming it.
