BBQ Chicken Melt with Fried Jalapeno Chips and Cilantro Garlic Spread

Ingredients

1/2 cup mayonnaise

1/2 cup Cilantro leaves

1 clove of garlic

3 cups shredded Rotisserie chicken

1 1/2 cups sweet honey barbecue sauce

2 cups vegetable oil

2 jalapeno peppers

1/2 cup all purpose flour

1 teaspoon cajun seasoning

1 egg

1/2 cup beer

4 ounces shredded smoked cheddar cheese

4 Original Hawaiian Sweet Sandwich Buns

Preparation
Step 1
Preheat broiler to High heat.
Step 2
In a small food processor place the mayonnaise, cilantro and garlic. Puree until smooth and set aside for later use.
Step 3
In a medium sauce pan, combine the shredded chicken and honey barbecue sauce. Heat on medium low heat until chicken is warmed through.
Step 4
In a high sided large sauce pot, heat the vegetable oil to 360 degrees. While the oil is heating, slice the jalapeno peppers into ¼ inch slices and remove the seeds. In a small mixing bowl whisk together the flour, Cajun seasoning, egg and beer until smooth. Once the oil is hot, dip the jalapeno slices into the beer batter and place gently in the pot. Fry, in batches, for 2-4 minutes or until golden brown. Remove fried pepper slices to a paper towel lined plate and set aside for later use.
Step 5
Place the bun halves, cut side up, on a large cookie sheet. Place under the broiler, watching closely to prevent burning, for about a minute. Remove the bread from the broiler when it’s lightly toasted. Take the top halves of each bun off the cookie sheet and set aside.
Step 6
Place about ¾ cup chicken mixture on each of the toasted bun bottoms. Top each with the shredded smoked cheddar cheese. Place the pan back under the broiler for about 3 minutes, or until cheese is bubbly and melted. Top each bun bottom with an even amount of fried jalapenos. Spread the cilantro mayo evenly on each bun top and place one on each bottom half. Serve immediately with plenty of napkins!
