  • 1/4 cup crumbled blue cheese
  • 1 tablespoon white wine vinegar
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper
  • 1/2 pound cooked lobster meat, coarsely chopped (about 3 tails)
  • 2 tablespoons thiny sliced basil
  • 6 slices KING'S HAWAIIAN Original Sweet Sliced Bread
  • 2 cups fresh spinach leaves, torn
  • 4 slices Heirloom Tomato
  • 1 ripe avocado, sliced
  • 6 strips thick-cut bacon, cooked crisp

This razzle-dazzle sandwich is perfect for a lunch on the deck with a long-lost friend, or on a picnic blanket at a summer concert. Lobster, avocado and tomato are layered (with a little bacon for good measure!) on sweet, soft King's Hawaiian slices, dressed with a creamy blue cheese mayonnaise.
Step 1
In a medium bowl, whisk together blue cheese, white wine vinegar, olive oil, mayonnaise, salt, and pepper until well combined. In a separate bowl, combine lobster and basil, then toss with 3 tablespoons of the blue cheese mayonnaise.
Step 2
Assemble the sandwich by spreading each slice of toasted King's Hawaiian Original Hawaiian Sweet Sliced bread with a tablespoon of the blue cheese mayonnaise. Layer one slice with ½ cup of spinach, half of the tomato slices, 3 strips bacon, a second slice of King's Hawaiian bread, half of the avocado, half of the lobster salad, and a third slice of King's Hawiian Slliced bread, blue cheese side down. Insert 4 long toothpicks or skewers into the sandwich to hold it together, then cut into 4 triangles. Repeat with remaining ingredients to build a second sandwich.
Step 3
Serve to friends you really love.
