1. Make the Dry Seasoning Mix

To make the dry seasoning mix, take a large bowl and whisk together Panko, cornstarch, cornmeal, garlic powder, onion powder, salt, pepper, and Nashville Hot Dry Seasoning. Pour the mixture into a mixing bowl.

Marinate the chicken in the buttermilk mixture

2. No Such Thing as Too Much Butter(milk)

To make the chicken, take a large bowl and whisk together the buttermilk and hot sauce. Submerge the chicken in the buttermilk mixture. Put the submerged chicken in the refrigerator to marinate for 4 hours (optional). 

Remove the chicken from the buttermilk mixture, allowing any excess to drip off of the chicken. Place chicken in the mixing bowl with the seasoning mix and completely coat chicken with the mix. 

Remove chicken from the bowl, tap off excess mix, and transfer chicken to a baking sheet lined with a wire rack. Let rest at room temperature for 15 minutes.

3. Strike While the Oil is Hot

As the chicken is resting, fill a large cast iron skillet one-third of the way up the sides with a melted Canola oil. Heat the oil to 350°F. When the oil is hot, cook until the chicken is golden brown and crisp on both sides and the internal temperature of the chicken reaches 165°F (about 14 to 16 minutes). Reserve frying oil.

4. Build Your Sliders

  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1 cup buttermilk
  • 1 tbsp onion powder
  • 4 tbsp butter
  • 1 tbsp Nashville Hot Dry Seasoning
  • 2 chicken breasts, 2.25 lbs each
  • 12-pack KING’S HAWAIIAN Original Hawaiian Sweet Rolls
  • 4 tbsp mayonnaise
  • 24 pickle chips
  • 1 cup Panko breadcrumbs
  • 1 cup cornstarch
  • 1 cup cornmeal
  • 3 cups Canola oil for frying
  • 1 bottle Nashville Hot Sauce
  • 12 skewers
