Preheat oven to 400 degrees

Combine ingredients cinnamon through brown sugar to make a seasoning rub

Trim excess fat from pork tenderloin

Rub pork tenderloin with the seasoning.

Heat oven proof skillet on stove top.

Add 1 tablespoon olive oil.

Add pork tenderloin and sear on all sides.

Place skillet in oven and bake 18-20 minutes until internal temperature is 145 degrees

Let rest 5 minutes.

While pork is baking, make picadillo salsa. Combine red peppers through olive oil for salsa in mixing bowl and set aside

Heat 2 cups vegetable oil in skillet on medium high heat.

Peel plantain and cut in half horizontally. Cut each half into 4 thin vertical slices

Fry plantain slices until golden brown. Remove from oil drain on paper towel and salt.

Combine mayonnaise, chili powder, and cumin

Thinly slice pork tenderloin

Toast sandwich roll

Place ¼ of the sliced pork on bottom of each bun

Place 2 fried plantain slices on pork.

Top plantain with 2 Tbsp salsa

Spread 1 Tbsp of seasoned mayonnaise on the top of each bun and serve
