  • 1 Avocado
  • 4 ounces Frozen Salad Shrimp, thawed
  • 1/2 cup Roasted Red Bell Peppers in a Jar
  • 3 teaspoons capers
  • 2 teaspoons lemon juice
  • 2 Cloves garlic, minced
  • 3 teaspoons honey
  • 1 teaspoon Dry Oregano
  • 2 teaspoons balsamic vinegar
  • 2 tablespoons Extra virgin olive oil
  • 1/8 teaspoon salt
  • 4 Leaves of Green Lettuce, torn
  • 4 tablespoons mayonnaise
  • 4 Original Hawaiian Sweet Mini Sub Rolls

Preparation

Sub sandwich with shrimp, avocado, roasted red bell pepper salad seasoned with sweet balsamic vinaigrette.
Step 1
Mince capers. Chop roasted bell pepper. Halve avocado, remove seed, scoop avocado pulp and cut into small cubes.
Step 2
In a bowl, combine shrimp, chopped roasted pepper, capers, lemon juice, minced garlic, honey, oregano, and olive oil. Mix well. Then add avocados and balsamic vinegar. Mix well.
Step 3
Spread 1 tablespoon mayonnaise on each bottom of mini sub roll, place lettuce, and put 1/4 of shrimp avocado salad. Make 3 more sub sandwiches.
