My take on the classic lobster roll, this sweet and spicy sandwich is a delicious combination of fresh cooked shrimp, pineapple, red pepper and onion in a peppery mayonnaise, topped with warm smoked Gouda and crisp bacon and served on toasted King's Hawaiian Original Sweet Mini Sub Rolls.
In bottom of medium-large bowl, combine mayonnaise and chili sauce. Add shrimp, pineapple, red pepper and onion. Toss well to combine and coat.
Preheat oven to broil. Separate mini sub roll tops and bottoms and place, cut side up, onto a baking sheet. Place 1 slice of Gouda and 1 slice of bacon, respectively, onto each roll top. Broil 1-2 minutes to soften/melt cheese and crisp bacon on the roll tops and to lightly toast roll bottoms.
To serve: Place 1/3 cup lettuce onto each roll bottom. Divide and top lettuce on each roll bottom with an equal amount of shrimp mixture. Place roll tops onto shrimp mixture and secure with toothpick if necessary. Serve immediately. Makes 1 serving (of 2 mini subs).
