Chicken and Waffles is a homespun modern Southern classic. It is delicious, but a sticky, greasy mess to eat. By reshaping and recombining the savory and sweet elements using King's Hawaiian sweet bread, this recipe offers a fresh alternative that is fast and easy to eat at home or on the go. Enjoy!
Cut each chicken breast (widthwise) into three equal sized pieces
Thoroughly coat chicken pieces with flour
Dip and coat chicken pieces in egg and generously coat with bread crumbs
Deep fry or pan fry chicken pieces until crispy and golden brown on each side
Drain and set aside on paper towels or a baking rack
Using a hand blender on high speed, whip butter until creamy. Add maple syrup and whip until stiff peaks form. Set aside.
Preheat waffle iron to low heat and separate individual rolls and slice in half to form a sandwich bun
Place top and bottoms spaced evenly on waffle iron and carefully close lid until rolls are lightly toasted and hold their waffle shape
Spread butter onto one side of bottom and top waffled buns, place one chicken piece between the buttered sides and repeat. Makes 12 sliders.
For added sweetness, drizzle chicken pieces with extra maple syrup before assembling sandwich.
