Sweet Island Chicken Sandwich

8 Boneless skinless chicken thighs

1 Avocados, thinly sliced

1 Cucumber, peeled thinly sliced long ways

1 Head butter lettuce, washed and separated

Sriracha Mayonnaise

Sesame Seeds (optional for garnish)

1 Bottle King’s Hawaiian Sweet Island Ginger Sauce

1 package King’s Hawaiian Original Hawaiian Sweet Hamburger buns

Step 1
In a Ziploc bag, combine chicken and 1c King’s Hawaiian Sweet Island Ginger Sauce. Let marinade in fridge for 4 hours.
Step 2
Heat grill to medium-high heat. Place chicken on grill and cook each side for approx 5-6 mins or until thoroughly cooked, brushing on more sauce in between if you prefer.
Step 3
Build your sandwich. Bottom bun, sriracha mayo, butter lettuce, grilled chicken thigh, cucumber, avocado, sesame seed garnish and top bun.


This sandwich is good with just the chicken, sriracha mayo and bread! But be free to add what you want. Melt some cheese over the chicken (maybe jack?), and add other types of veggies or slaw in place of the ones we used.
