I took iconic grilled cheese sandwiches to a new level with tomatoes, mushrooms, two kinds of cheeses and King's Hawaiian Sweet Sliced Bread,.
Heat olive oil over medium-high heat in a skillet until hot and add mushrooms, sprinkle with salt and pepper and cook without stirring for 3 minutes or until crisp.
Dice tomatoes and drain excess liquid in a colander. In a bowl, combine garlic, pesto and 4 tablespoons of the soft butter. Combine well and spread on six bread slices. On each, add equal amounts of tomatoes, mushrooms, Cheddar and Gouda cheese. Top with remaining slices of bread.
Heat a griddle over medium-hot heat. Spread remaining soft butter thinly on sandwiches and place, buttered side down on griddle. Spread remaining butter on unbuttered bread and grill, 2 to 3 minutes on each side or until golden brown.
