With a meat mallet lightly flatten 2oz chicken breast and set aside.
In three small bowls; scramble raw egg in one, flour in the second and panko in to the third.
Season bowl that contains Flour with salt and pepper.
Drench chicken in flour then egg and coat with panko.
Heat oil in a medium saute pan on medium (350 degrees).
Fry Schnitzel to a golden brown, or to a internal temperature of 170 degrees.
In a small bowl add beer, blue cheese, mayonnaise, lemon and season with salt and pepper, mix and set aside.
Sauté mushrooms with butter and garlic in a small pan and set aside.

Add baby arugula on to bottom of the KING'S HAWAIIAN Pretzel Slider Bun and cover with arugula.
Place chicken schnitzel on to arugula, then stack hot mushrooms.
Top mushrooms with white beer cheese sauce.
