Brush the buns with melted butter and toast the insides of the bun on a hot griddle. After toasting, evenly spread mustard on the bottom of the buns and mayo on the top buns.
Season the burger with salt, place on the griddle and cook for 45 seconds, then smash to 1/3rd inch thickness and cook for 2 minutes then flip and cook for another 2 minutes.
Spray a piece of 12x12 foil with non-stick cooking spray. Place the bottom bun off center on the sprayed foil.
Place the pickles on the bottom then top with burger patty. Top with a slice of cheese then a slice of ham.
Place the top bun on and wrap tightly with foil.
Place on the griddle and place a heavy weight (brick or cast-iron pan) on top. Press down gently to flatten. Cook for 2-3 minutes then remove weight, flip, replace weight and cook on the other side for 2 more minutes.
Cut in half straight through the foil and serve.
