Combine strawberries, sugar and lemon juice together in a saucepan and bring to a boil on medium heat, stirring occasionally.
Bring heat down to “low” allow to simmer for 10 minutes. You will need to monitor and stir frequently to avoid burning.
Turn off the heat and use handheld blender to breakdown the whole strawberries and smooth the sauce out. It’s nice to have some small strawberry chunks in the sauce but if you prefer no chunks, you can use a strainer to remove all chunks. Your sauce is done when it is thick enough to coat the back of a spoon.
Take half of the package of KING’S HAWAIIAN Guava Crunch Cookies and smash them into crumbles. (We placed the cookies in a medium sized metal bowl, and used the bottom of a smaller metal bowl to smash them.). You can make the crumbles as fine or as chunky as you want them to be. Set aside.
