In a small bowl, combine mayonnaise, pickles, mustard, and pepper jelly.
Place bottom section of rolls on flat surface. On inside of 6 roll section, spread half of prepared sauce; layer 2 ounces ham, 1-1/2 ounces sliced pork, 6 large pepper slices, and 1-1/2 ounces sliced Swiss cheese, place roll tops over.
Place on oil greased griddle or 12 inch flat pan; top with grill press. Cook for about 1-1/2 minutes; turn; replace grill press, cook for about 1 minute or toasted. Remove to cutting board, cut into 6 mini sandwiches.
Repeat cooking steps with remaining rolls as above. Brush each roll top very lightly with pepper jelly to glaze and top each with pepper ring and a decorative toothpick.
