Step 1
Pre-heat oven to 350 degrees.

Season chicken with salt and pepper.
Step 3
Sear on griddle at medium high heat with 1 oz of canola oil to achieve grill marks.

Transfer chicken to pan that can go in oven.
Step 5
Glaze chicken breast with 1 teaspoon of Macadamia Nut Honey and then spread 1 oz of BBQ sauce on top of the honey.
Step 6
Place chicken in preheated oven for about 10 minutes. When chicken internal temperature reaches 175 degrees, remove from oven and let it rest for 5 minutes.

While chicken is in the oven, toast buns in lightly buttered pan.
Step 8
In mixing bowl, toss arugula with white wine vinegar, sea salt and pepper to taste.
Step 9
After chicken is out of the oven and rested for 5 minutes, cut into two pieces.
Step 10
Assemble sandwich. On Bun bottoms, place arugula mix, then sliced tomatoes, then chicken. Pour remaining BBQ sauce on top.
Step 11
Add the bun tops. Garnish with skewered baby pickles and serve.
