  • 3 each large eggs, beaten
  • 2 cups salted crackers (about 1 sleeve)
  • 2 cups panko breadcrumbs
  • 2 pounds boneless, skinless firm white fish filets, such as snapper or mahi mahi
  • As Needed, canola oil for frying
  • ¼ cup garlic butter, melted
  • ½ each sweet onion
  • 4 each large kosher dill pickles
  • 2 cups dry slaw mix
  • 1 T button capers, drained, rinsed and finely chopped
  • 1 cups mayonnaise
  • 1 T Dijon mustard
  • 1 pinch cayenne
  • 1 tsp lemon juice
  • 8 slices American cheese
  • As Needed, Kosher salt and freshly ground black pepper
