ONION RINGS - In a bowl, whisk together the flour, cornstarch, cayenne, egg and beer until just combined. Fill a large heavy bottomed pot with oil and heat to 350 degrees F. Set a large wire rack on a rimmed baking sheet and place near the stove. Working in batches dip the onion rings through the batter and then carefully add to the hot oil. Deep fry the onion rings until golden brown and crisp, about 3-4 minutes. Using a wire skimmer, remove the onions from the oil and place on the prepared wire rack. Sprinkle salt on finished onion rings
BLACK PEPPER SAUCE - In a medium bowl combine the melted butter, hot sauce, cajun seasoning and black pepper. Whisk to combine.
BURGERS - Divide the meat into 4 balls and pat into smaller slider size patties. Add the buttermilk to a shallow bowl. To another shallow bowl, add the cornflakes, Panko, flour and cajun seasoning. Working in an assembly line, dip the patties, one at a time through the buttermilk and then dredge through the cornflakes, coating the patties completely. Place breaded patties on a plate and repeat with the remaining patties.
Heat the same pot of oil you fried the onion rings in back to 350 degrees F. Next, add the burgers and cook until golden brown and cooked through, about 3-4 minutes per side. Remove to a wire rack and let rest 1-2 minutes.
Place cheddar cheese slices on top of each deep fried patty and place in oven 5-10 minutes or until cheese has melted.
Slice King’s Hawaiian Sweet Rolls in half and break apart one at a time. Top bottom half with a spoonful of black pepper ranch sauce followed by deep fried patty, onion ring, top half of roll and enjoy!
