Step 1
Pre-heat oven to 350 degrees.

Season chicken with salt and pepper to taste.

Sear on griddle at medium high heat with 1 oz of canola oil to achieve grill marks.

Transfer chicken to baking pan.

Coat the top of the chicken with the Big Island Bees Ohia Lehua Blossom Honey.

Place chicken in baking pan in preheated oven for about 12 minutes. When internal temperature reaches 170 degrees, remove from oven and let it rest for 5 minutes.
Step 7
While chicken is resting, toast buns in lightly buttered pan.
Step 8
In mixing bowl, toss arugula with white wine vinegar plus add sea salt and pepper to taste.
Step 9
Scoop Maui Upcountry Maui Onion Garlic Mustard onto the honey-glazed chicken breasts.
Step 10
Assemble sandwich by placing bottom bun on plate, then arugula; sliced chicken breasts; and sliced tomatoes.
Step 11
Add the bun tops and garnish with skewered baby pickle, if desired, and serve.
