The perfect combination of sweet and savory, these pork and mango sandwiches will make you say Aloha in no time! Using (almost!) fool-proof pork tenderloin makes these sandwiches almost impossible to mess up. Feel free to top with any other island flavors you have on hand!
Put cola, soy sauce, garlic, ginger and sriracha into blender. Blend until garlic is pureed. Pour into a plastic bag or large bowl and add pork tenderloin. Marinade for 3 hours minimum.
Once pork is almost done marinading, thinly slice mango and toss with olive oil and salt and pepper. Toss green onion with the olive oil, salt and pepper but keep intact. Grill mango and green onion until fragrant and grill marks form. Set aside to cool.
Heat oven to 350. Place pork in a baking pan and bake until internal temperature reaches 140 (approx. 30 mins). Do not overcook! Take out of oven and let rest.
Pour marinade into a pan on medium heat. Stir in the flour. Cook until it boils and reduces, about 10 minutes.
Once pork has rested, slice into thin slices. Toast Hawaiian Sweet Dinner rolls either on grill or broil in oven. Brush with butter and cooled sauce. Layer pork, mango, scallions and cilantro.
