Recipe Details

2 tablespoons butter

1/2 cup Carrots, chopped

1/2 cup Onions, chopped

1/2 cup Celery, chopped

1 1/2 pounds Skinless, boneless chicken

2 tablespoons olive oil

1 teaspoon kosher salt

1 teaspoon Course ground pepper

1/2 teaspoon Ground ginger

1/2 teaspoon Ground thyme

1/4 teaspoon Cayenne pepper (optional)

3/4 cup (6-oz) Pineapple juice

1 cup Chicken stock

1 tablespoon flour

1 cup milk

Step 1
Preheat the oven to 350 degrees.
Step 2
Melt the butter in a large oven-proof skillet over medium-high heat. Add the carrots, onion and celery. Saute for 5-7 minutes, until tender.
Step 3
Cube the chicken and toss with olive oil and spices. Add to the pan and cook for 5 minutes, stirring occasionally.
Step 4
Add the pineapple juice and chicken stock and bring to a boil. Whisk together the flour and milk and add it to the pot. Bring to a simmer.
Step 5
Arrange the rolls in the skillet, pressing them to the bottom; they won’t be fully submerged. Cover the skillet and place in a 350-degree oven for 20 minutes.
Step 6
Spoon 2-3 rolls into a serving bowl and ladle with broth and chicken.
