  • 3 KING’S HAWAIIAN Original Hawaiian Sweet Dinner Rolls (or enough to yield 1 ½ c. loosely packed, fresh bread crumbs)*
  • 1 1/2 cup all-purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup Brown sugar, packed
  • 12 tablespoon Unsalted butter, softened
  • 1/4 - 1/2 teaspoon ground cloves, more or less depending on your preference
  • 1 teaspoon vanilla
  • 1 teaspoon coconut extract (commonly available at Asian grocers)
  • 1 egg
  • 1 egg yolk
  • 1/4 cup sweetened, shredded coconut
  • 1/4 cup whole macadamia nuts, finely chopped (chop after measuring the whole nuts)
  • Chocolate chips, however many you prefer
  • Sprinkles, optional

Celebrate the holiday season with these Aloha filled Hawaiian Christmas cookies. Sit back and enjoy the memories of another year past. Happy Holidays!
Step 1
Preheat oven to 350 degrees F.
Step 2
In a large bowl, beat together sugar, brown sugar and butter until it becomes light and creamy. Add ground cloves, vanilla, coconut extract, egg and egg yolk. Beat mixture until it is well combined.
Step 3
Sift together flour, KING’S HAWAIIAN bread crumbs, salt and baking powder. Gradually mix the sifted dry ingredients into the sugar/butter mixture.
Step 4
Once the cookie dough is well mixed, add shredded coconut, macadamia nuts, chocolate chips and sprinkles. Stir to combine.
Step 5
Place the dough in the refrigerator for at least 15 minutes to firm up.
Step 6
Scoop dough by the tablespoon (or larger, if you prefer) onto an ungreased cookie sheet. Bake at 350 degrees F. for 10 to 12 minutes or until edges begin to brown.
