Cooking Steps: Veggie & Sauce Prep Chop all veggies and fresh Basil to a fine chop. Place this veggie medley in a stand-bye bowl to be added later with ingredients. Next, empty your Tomato Sauce and Paste into a mixing bowl and add dry ingredients (Italian Seasoning, Garlic Salt and Crushed Red Pepper). Mix well.
Grease the base of your cooking pot with olive oil and place on a LOW heat and empty sauce into pot. Cover with lid. Stir sauce every 5 minutes to avoid burning.
Next Step, Meatball Prep Take a large mixing bowl and remove sausage from it’s casing and crumble sausage into the mixing bowl. Take the veggie medley and slowly mix the sausage with the veggie medley. Add approx. 1 1/2- cups into the sausage mix.
You may add a tablespoon of Olive oil to help make the sausage mixture blend faster. Mix the ingredients by hand and make sure you have the veggies and herbs blended well throughout the sausage.
Making Meatballs Since we are making a meatball sandwich, it is important to make the right size of meatball. I like to make mine slightly smaller than a golf ball because I am able to fit more meatballs in my sandwich.
The best way to measure the right size is to use your hands. Simply take some sausage mix into your palm and form a ball in the base of the palm of your hand. When done, set the finished meatball aside and repeat the steps until all of the mix is used.
Next Step: Fry Pan Lightly grease a fry pan with some olive oil and add the meatballs into the fry pan on Med/ High heat. When all meatballs are placed on the pan, take a lid and cover the meatballs. The lid helps trap heat, which also cuts down time on cooking. Rotate each meatball every 5-7 minutes. You should be able to cook all the meatballs within 15- 18 minutes.
When you have completed the sausage rotation, pour all of your sauce from the pot into the meatball fry pan as seen in the video. Stir sauce into the meatball pan slowly and lower heat to LOW setting, cover with lid for another 5- 8 minutes.
Ready to Serve Take your King’s Hawaiian, Mini Sub roll and place a couple slices of cheese in the roll. Add a scoop of sauce and meatballs on the roll and you now have my Meatball Sandwich!
