  • 2 cups all-purpose flour
  • 1-1/2 cups sugar
  • 1 cup Poi (mixed with 1/4 cup water)
  • 1 teaspoon baking powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon salt
  • 6 tablespoons Melted Butter
  • 2 eggs
  • 1 cup heavy cream
  • Streusel Topping: *
  • 1/4 cup flour
  • 1/4 cup Brown sugar
  • 1/4 cup KING'S HAWAIIAN Sweet Bread Crumbs
  • 2 tablespoons Cold Butter

Preparation

The ideal food to grab and go during the holidays, whether your shipping, wrapping gifts or cooking for the family. Make these Poi Muffins a new ohana (family) tradition!
Step 1
Preheat the oven to 375 degrees. Prep muffin pans with liners.
Step 2
In a small bowl make the streusel by mixing together the flour, brown sugar and King’s Hawaiian Sweet Bread crumbs. Cut the cold butter into the mixture until crumbly. Set aside.
Step 3
In a medium bowl whisk together the flour, sugar, baking powder, baking soda and salt.
Step 4
Prep the Poi by stirring it together with ¼ cup water and it to the dry ingredients along with the butter, eggs and heavy cream. Stir together until just combined.
Step 5
Spoon the batter into the liners about 3/4 of the way full. Generously add the crumb topping on top of each muffin.
Step 6
Bake for 14-16 minutes depending on your oven, let cool slightly on a wire rack.
