  • 1 Small Potato, diced and parboiled
  • 0 Red Bell Pepper, seeded and diced
  • 0 Green Bell Pepper, seeded and diced
  • 4 Eggs, scrambled
  • olive oil
  • salt and pepper to taste
  • Avocado slices and Cilantro for garnish

This vegetarian take on the classic Mexican breakfast sandwich is healthier option that delivers bold flavors and sweet textures.
Step 1
Preheat a skillet over medium heat and add 1Tbsp. Olive Oil
Step 2
Sauté onion and bell peppers until translucent, about 5 minutes.
Step 3
Add potatoes and season with salt and pepper.
Step 4
Add Soyrizo and cook 3 minutes.
Step 5
Add eggs and scramble with soyrizo and veggies. Cook another 3-5 minutes. Remove from heat.
Step 6
Slice rolls in half, add soyrizo mixture and garnish with avocado and cilantro. Enjoy!
