Soyrizo Breakfast Sandwich

1/2 pound Soyrizo
1/4 Small onion, diced
1 Small Potato, diced and parboiled
1/4 Red Bell Pepper, seeded and diced
1/4 Green Bell Pepper, seeded and diced
4 Eggs, scrambled
olive oil
salt and pepper to taste
Avocado slices and Cilantro for garnish

Step 1
Preheat a skillet over medium heat and add 1Tbsp. Olive Oil

Step 2
Sauté onion and bell peppers until translucent, about 5 minutes.

Step 3
Add potatoes and season with salt and pepper.

Step 4
Add Soyrizo and cook 3 minutes.

Step 5
Add eggs and scramble with soyrizo and veggies. Cook another 3-5 minutes. Remove from heat.

Step 6
Slice rolls in half, add soyrizo mixture and garnish with avocado and cilantro. Enjoy!
