Spicy Poblano Burger

1 package King’s Hawaiian Sweet Hamburger Buns

2 poblano chiles

3/4 tsp kosher salt (divided)

1/2 cup mayonnaise

1 tbsp sriracha

1 tsp minced garlic

1 1/2 lbs lean ground beef

2 tbsp butter (melted

1 tsp soy sauce

2 slices pepper jack cheese

Step 1
Heat a grill or grill pan to high. Char the chiles, turning as needed, until blackened on all sides, about 10 minutes.
Step 2
Place in a large bowl and cover with plastic wrap. The steam will help the peels come off more easily. Let cool for about 10 minutes. Once the peppers are cool enough to handle, use your fingers to rub off the charred peel. Slice off and discard the stem, seeds, and veins. Finely chop the chiles. Put in a medium bowl and season with ¼ tsp salt and soy sauce.
Step 3
Mix the mayonnaise, sriracha and garlic in another medium bowl and set aside.
Step 4
Grill the burger patties for 4-5 minutes on one side. Flip and cook 1-2 minutes and then place down a slide of pepper jack cheese. Cook for another 2-3 minutes and remove.
Step 5
To assemble, spread 1 tablespoon of garlic sriracha mayonnaise on bottom bun followed by burger patty, poblano mixture, spread one more tablespoon of garlic sriracha mayo on the bottom of the top bun and enjoy!
