1In a food processor or blender, combine 1.5 cups mayonnaise and half a chipotle pepper until smooth. Taste. Repeat process, adding additional chipotle peppers to increase heat or adding additional mayonnaise to cool down, until desired flavor is reached. (We like heat, so we used about three chipotle peppers!)
2Generously coat inside of both top and bottom of KING’S HAWAIIAN Mini-Sub Rolls.
3While carne asada is cooking, prep as follows. On bottom halves of KING’S HAWAIIAN Mini-Sub Rolls, add shredded lettuce. On top halves of Mini-Sub Rolls, add cheese, then tomato slices, then avocado slices.
4Add cooked carne asada on top of lettuce. Fold together top and bottom halves of sandwiches. NOTE: if the carne asada is not tender enough to easily bite through, you will want to also slice the carne asada beforehand.
