Tropical French Toast Sandwich

8 slices King's Hawaiian Sweet Sliced Bread
4 large eggs
1 1/2 teaspoon pure vanilla extract
1 tablespoon Cinnamon, ground
1 cup milk
1 cup Diced Ripe Mango
1 cup Diced Ripe Pineapple
1 cup Diced Ripe Banana (do this at the last minute)
1 14 ounce can Coconut Milk, unsweetened
3/4 cup dark brown sugar packed
1 cup Flaked Coconut, sweetened
Pinch salt
Butter for greasing fry pan


Step 1
Make Coconut Syrup by putting coconut milk and brown sugar in pot, stir to combine, then add flaked coconut and pinch of salt.

Step 2
Bring to a boil, then simmer on low for about 15-20 minutes until thickened.

Step 3
For French Toast: Whisk eggs with vanilla extract, then add cinnamon and whisk to combine.

Step 4
Heat fry pan over medium low heat, then add butter.

Step 5
Dip slice of King's Hawaiian Sweet Sliced Bread into egg mixture. Count to 20 seconds per slice, per side (no more, no less). Do this just before the bread goes into the fry pan.

Step 6
Fry 3-4 minutes per slice per side, or until golden brown.

Step 7
To Plate: put one slice of french toast on plate, top with pineapple, mango and banana. Drizzle coconut syrup over. Top with second slice of French toast, then more fruit and coconut syrup.
