Summer seemed a little too short this year.  It is now time for back to school and nothing seems to make my boys more hungry than a long day at school.  I try to keep after school snacks ready to eat when they walk through the door.  But every once in a while I make them something extra special.

This is where the Bacon-Mac & Cheese Grilled Cheese comes in.  It may sound a little outside the box but let me tell you, it is GOOD!  I had just a little mac and cheese leftover and a few slices of bacon - I know leftover bacon is a crazy concept!  After pondering over a good snack I started pulling things out of the fridge. I had some good melty cheese and some of my favorite KING'S HAWAIIAN Original Hawaiian Sweet Sandwich Rolls and it all just came together.

The Bacon-Mac & Cheese Grilled Cheese was filling snack to tide my ever growing boys over until supper time and it would make a pretty great lunch too. Add a few grapes and a tall glass of milk and it is just the kind of meal my boys love.

Bacon-Mac & Cheese Grilled Cheese

Yield: 2 sandwiches


●        2 KING'S HAWAIIAN Original Hawaiian Sweet Sandwich Buns

●        2 teaspoons butter

●        2/3 cup melty cheese (Jarlsberg, Swiss, American - anything melty)

●        1/2 cup mac & cheese

●        3 slices bacon cooked and cut in half

Cooking Directions:

Add butter to a skillet or griddle and place over medium heat to melt.

While butter melts, separate buns.  Place about 1/4 of cheese over each bottom bun.  Add half of mac & cheese to each bun and top with 1 1/2 slices of bacon.  Top with remaining cheese and bun tops.

Lightly press sandwiches together and place in melted butter.

Cook on both sides until bun is crisp and cheese is melted.

Cut in half and serve immediately.
