It’s finally autumn and that means a lot of time indoors with the family. All those cozy days also bring plenty of food to be enjoyed. One of the best ways to use up all that cozy home cooking is to create additional meals.

Turkey is one of those things we all have an abundance of during the fall months so it’s best to use up what you can. It’s a helpful way to stick to a budget if you’re feeding a large family as well!

In the winter we always have plenty of cabbage around, since we buy what vegetables are in season. I like to find unique ways to use the vegetables I have on hand, or that are in season.

Turkey Pumpkin Sandwich Recipe



  1. Preheat your oven to 250 degrees and first start to prepare your pumpkin.
  2. Start first by cutting your baking pumpkin in half. Bake your pumpkin for an hour until soft.
  3. Cut cabbage, add pepper and butter and cook over stovetop until the cabbage is soft.
  4. Simply scoop out roasted pumpkin!
  5. To create the sandwich, layer the pumpkin on your KING'S HAWAIIAN Original Hawaiian Sweet Mini Sub Roll, top with turkey, and then the cooked cabbage.

In the end you have a tasty and yet satisfying snack, and it tastes almost exactly like Thanksgiving dinner all on a sandwich!
