When it comes to holiday parties I always have a big dessert table. In our family, holiday eating is an all day affair so I like to have as many options as possible. Cakes, pies and cookies are standard but some family members may not be big on overly sugary desserts. Muffins are a great addition to a holiday table because they have just a touch of sweetness and are easy to nibble on.

These muffins are distinctly Hawaiian because the secret ingredient is poi! Poi is a Polynesian side dish normally served at luaus. It’s made from taro which gives it a noticeable purple color. Alone, the flavor of Poi takes some getting used to but baked into a muffin topped with a delicious streusel made of King’s Hawaiian sweet bread crumbs, these are irresistible!

Muffins also make and ideal food to grab and go during holiday prep, whether you’re shopping, wrapping gifts or cooking for the family. Make these Poi Muffins a new ohana (family) tradition!

Poi Muffins with Sweet Bread Streusel (makes 24 muffins)

Ingredients

  • 2 cups all-purpose flour
  • 1-1/2 cups sugar 1 cup Poi (mixed with ¼ cup water)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons melted butter
  • 2 eggs
  • 1 cup heavy cream

Streusel Topping

  • 1/4 cup flour
  • 1/4 cup brown sugar
  • ¼ cup KING'S HAWAIIAN Sweet Bread crumbs
  • 2 Tablespoons cold butter

Directions

  1. Preheat the oven to 375 degrees. Prep muffin pans with liners.
  2. In a small bowl make the streusel by mixing together the flour, brown sugar and King’s Hawaiian Sweet Bread crumbs. Cut the cold butter into the mixture until crumbly. Set aside.
  3. In a medium bowl whisk together the flour, sugar, baking powder, baking soda and salt.
  4. Prep the Poi by stirring it together with ¼ cup water and it to the dry ingredients along with the butter, eggs and heavy cream. Stir together until just combined.
  5. Spoon the batter into the liners about 3/4 of the way full. Generously add the crumb topping on top of each muffin.
  6. Bake for 14-16 minutes depending on your oven, let cool slightly on a wire rack.
