Life is busy, it never seems to slow down.  I always think it will, but with kids, school, sports, work and everything else, it just keeps going.  It is important to still take the time and sit down together at meal time.  I always enjoy the evenings that we actually sit at the dinner table.

Mealtime can be scattered with different schedules and many days there isn't time to cook a huge spread for the family.  That doesn't have to mean take-out or a bowl of cereal, although that is tempting at times!  These Ultimate Roast Beef Sub Sandwiches come together in less than 15 minutes and you can pair them with a great pasta salad and some fresh fruit for a simple, filling and delicious meal.

KING'S HAWAIIAN Original Hawaiian Mini Sub Rolls are my favorite to have in the pantry because they elevate a ordinary sandwich into something special.  Always soft with a little sweetness in the background they are perfect with the spicy pepper-jack cheese, roast beef, crispy bacon and creamy avocados.  Now doesn't this sound like the Ultimate Roast Beef Sub Sandwich!

Ultimate Roast Beef Sub Sandwiches


  • 4 King's Hawaiian Mini Sub Buns
  • 3 tablespoons softened butter, divided use
  • 8 slices of Roast Beef
  • 4 slices bacon, cooked and cut in half
  • 2 avocados, peeled, seeded and sliced
  • 4 slices pepper-jack cheese
  • Favorite condiments like mayo, mustard or barbecue sauce


Cut mini sub buns in half and lay cut side up on a baking sheet.  Spread each side with butter (using about 2 tablespoons of butter). Broil on low just until buns start to brown.  Remove from oven.  Set aside bun tops from the baking sheet.

Add remaining 1 tablespoon of butter to a skillet over low heat.  Add roast beef slices and cook just until they are hot and start to crisp on the edges.  Remove to a paper towel-lined plate to drain.

Layer toasted buns with 2 slices of roast beef, 2 pieces of bacon (one slice) and top with pepper-jack cheese.  Place under the broiler just until cheese is melted.

Top with sliced avocado, and spread top side of buns with desired condiments and place over sandwiches.

Serve immediately.
